Aged Cardona

100% goat milk cheese, aged for more than 8 months. It has a firmer texture, sweet, with a slight nutty flavor. Great for eating with dried fruit or sauces. Dipped in brown wax to protect the cheese. This cheese took 2nd Place in its class at the 2005 American Cheese Society Competition and 2nd Place at the 2006 World Cheese Competition.
