Made with sheep, goat, and cow milk, Caso Bolo Mellage is made in 3 lb. balls, aged for two years, and then cut into wedges. Its flavor is complex, pleasing and has a nutty finish. Caso Bolo Mellage took 1st place at the 2010 Wisconsin State Fair as well as at the 2011 American Cheese Society Competition, 2011 World Cheese Awards, and 2013 U.S. Championship Cheese Contest. Most recently, this cheese was awarded a bronze ribbon at the 2015 World Cheese Awards.
