In this class, Chef John Williams of the Sundara Inn & Spa in Wisconsin Dells will show you it is possible to prepare fresh wellness cuisine across four seasons even when you live in the Midwest and are beholden to the quirks of Mother Nature. By using Carr Valley cheeses and other local Wisconsin grown ingredients, Chef John will prove to you that "satisfying delicious" and "good for you" need not be mutually exclusive pursuits in wellness lifestyle cooking. Featured recipes will include Wisconsin Caramel Apples with 4-year cheddar, Roasted Beet Skewers with Goat cheese, asparagus & a balsamic reduction, Bacon Wrapped Dates, Blue Cheese Cheesecake with poached pears & honey.
ABOUT CHEF JOHN WILLIAMS
He may not be from Wisconsin, but he's a Midwesterner through and through. Growing up in Michigan, his great grandfather owned a Greek restaurant and his grandfather was a meat cutter. At the tender age of eight, John already knew that he wanted to be a chef when he asked his mother if he could prepare Duck a l'orange for the family. John holds multiple culinary and hospitality degrees and became a certified executive chef in 2003. Now at Sundara, he has "arrived at the kind of cooking (he) always wanted to do. Fresh, flavorful, proportioned, balanced, seasonal, and sourced locally."
